Chinese Noodle Delight

Ingredients:

  • 6 large chicken breast fillets, thinly slivered
  • 1 punnet yellow and green patty pans, chopped
  • 1 red pepper
  • 1 large red or white onion, sliced
  • 250ml broken up broccoli florets
  • 125ml shredded cabbage
  • 6 baby carrots
  • 250g sliced mushrooms
  • 45ml olive oil
  • 45ml butter
  • 100ml Illovo Traditional Syrup
  • 30ml soya sauce
  • 15ml general seasoning
  • 125ml old brown sherry
  • 30ml balsamic vinegar

Method:

  • 1. Prepare chicken and all vegetables and have them ready.
  • 2. Heat olive oil and butter together in a wok and stir-fry chicken until browned. Remove and set aside.
  • 3. Sauté onions wok, adding more oil if necessary. Add in all the remaining vegetables and stir-fry until nearly done but still crunchy.
  • 4. Add chicken and remaining ingredients, stirring over a high heat to reduce liquid but retain flavours.
  • 5. Serve on cooked Chinese noodles.
